Tacos the Healthy Way

Ingredients:

6-12 Corn Tortillas

1 lb ground Turkey (you can use ground beef/pork/etc…)

Taco Seasoning

Water

Lettuce

Onion

Sour Cream

Cheese

Hot Sauce

Tools:

1 skillet

1 wooden spoon or spatula

Knife

Cutting Board

2 small containers (for chopped onion and lettuce)

Spoons (for serving sour cream and, if you like, cheese, onion, meat, etc…)

Instructions:

Preheat oven to 400

Heat corn tortillas to soft and pliable.  You want them to bend without tearing.  If I feel like wasting time (a good way to wait for the oven to heat) I heat them each one at a time in a heated pan on the stove (the one I will use for cooking the meat).  Otherwise, I just stick them in the microwave, in a single layer, for a few seconds until they are hot and pliable.

If you used the microwave and it has a “keep warm” feature, keep the tortillas in there.  If it doesn’t and you are still using a microwave, don’t start it until the oven is to temperature.  If you are using the heat in a pan method, your timing may get a bit hectic in a bit, but not too crazy.

Once the oven is heated, pull out the rack in the middle of the oven and hang the tortillas over the rack to make taco shells.  Push the rack back in and close the door.  If you are afraid that they might stick, you can cover the rack lines with foil, but I have never had this problem.

While the tortillas are baking, brown the meat and mix in the taco seasoning.  You can follow the directions on the container OR you can do what I do: just sprinkle some on at the beginning and keep sprinkling a bit throughout.  Then add a little water to develop the seasoning flavor a bit.  I don’t know how or why it works, I just know it does.

You don’t need to stand over the meat so, while it’s doing it’s job (occasionally go back and stir it up) chop up the onion and lettuce.

After about 4 minutes, check in on the tortillas to make sure they aren’t getting too brown.  I like to take them out just before they are crispy hard, but that’s up to you.  They will just pop right off the rack.

Once the meat is completely browned, fill the tortillas with the meat.

Finally, have everyone fill their tacos with the desired fillings: onion, lettuce, sour cream, cheese…ooh, did I mention hot sauce?  You know the drill!

 

My Comments:

This is one of my favorite meals to make because it pulls together VERY quickly and is somewhat healthy.  You can make it as healthy or unhealthy as you like so everyone in the family is happy!
