Simple Coleslaw

This is a pretty simple recipe.  It only takes about 10 minutes to throw together.  You can enjoy immediately or wait a bit and have it later.

Servings: 4, although I really think it could be more

WW Points: 1 point per serving

1 large carrot

1 onion (I only used a half because, although I LOVE onion, some in my house do not love it so much)

1 cup low-fat mayonnaise

Grate the carrot  20100424 004 It’s best to grate it right into the bowl, just makes for less clean up

20100424 006 Why, yes, that bowl is different than the one in the picture, thanks for noticing.  After grating the carrots I realized the bowl was MUCH too small…be flexible!

Next, chop up the head of cabbage:

20100424 007 The best way is to slice into 1/4-1/2 inch slices directly down, then take the knife the other way to make smaller bites:

Toss everything into the bowl together:

This was a very simple recipe; however, I did add some salt and pepper.  I found it pretty bland at first.

I am not much of a coleslaw eater, but this is one that I will probably eat often.
