Quick and Easy – Mashed Sweet Potatoes

This is a very easy, very simple recipe.  It’s a bit on the long side of cooking, but it’s a “set it and forget it” kind of dish.

Take 1-2 whole sweet potatoes and peel them, then chop into small pieces:

 

Place those into a pot along with 1 TBS butter:

Add 1 TBS milk:

 

Add 1 tsp sugar:

Then, cover and heat on medium-low heat for 30 minutes or until they are fork soft.  Sometimes it can take up to 40 minutes, it really depends on how big the chunks are you put in, the smaller the chunks, the less time it will take.

Once they are done, mash them with a fork or a potato masher (I use a fork).

I have at times added a bit of brown sugar at the end, but that’s when I’m in the mood for something sweeter, but these are delicious!

I never thought I would say that I liked sweet potatoes, but I do love them!
